Antimicrobial materials for plastics in contact with food
von A. Campbell
Antimicrobials released from food packaging can play an important role in reducing the risk of pathogen contamination in addition to extending product shelf life. In recent years, antimicrobial packaging has attracted much attention from the food industry because of the increase in consumer demand for minimally process, preservative- free products.
This paper is a review the antimicrobial agents available and current research in the area of antimicrobial food packaging. The material considerations and safety aspects are outlined and the current status of European Union Legislation on antimicrobials for food contact is addressed.
